This Week's Menu: 8/2 - 8/8

Saturday: Chipotle Black Bean Burgers (Costco) on top of greens, topped with sautéed mushrooms and onions & Feta cheese + Sweet Potato Fries + Fruit Salad
Sunday: Avocado & Grilled Corn Salad + Sweet Potato Fries (leftover) + Pineapple
Monday: Veggie Fritatta with Garden Salsa + Smoothies
Tuesday: Stuffed Zucchini Boats (sauté onions, yellow squash, peppers, tomatoes, feta cheese and bake in zucchini) + Fruit
Wednesday: Shroom & Bean Burgers + Brussel Sprouts + Fruit
Thursday: Sweet Potato & Black Bean Tacos with Avocado-Pepita Dip + Fruit
Friday: Pancakes + Eggs + Smoothies OR mac & cheese

Breakfast Ideas:
Green Smoothies (add spirulina, chia seeds, flax seeds, etc.)
Steel Cut Oats
Eggs with Salsa & Toast

Sara Snow's Chocolate Smoothie (2 c. Coconut or Almond Milk, 1 banana, 3+ T. chocolate [syrup, cacoa nibs, carob], 3 c. ice)
