This Week's Menu: 7/28 - 8/3

This week I am participating in a 7-Day Clean Eating Facebook Group that an old roommate invited me to. So I'm adding a few breakfast, lunch, and snack ideas -- for the times when I am stumped.

Monday: Chipotle Black Bean Burgers (Costco) w/ Tomato & Avocado relish + Sweet Potato Fries + Berries
Tuesday: Veggie & Pesto Mini Pizzas + Fruit
Wednesday: Fiesta Kale Salad with Avocado and Crispy Tortilla Strips + Fruit
Thursday: Stuffed Portabello Mushrooms + Sweet Potato Fries + Fruit
Friday: Veggie Omelets + Toast
Saturday: repeat - Mini Pizzas or Black Bean Burgers
Sunday: Shroom & Bean Burgers + Fruit

Breakfast Ideas:
Green Smoothies (add spirulina, chia seeds, flax seeds, etc.)
Steel Cut Oats
Eggs & Toast
Yogurt & Berries

Lunch Ideas:
Open-faced Hummus & Veggie Sandwich
Spinach Salad w/ fruit and or veggies, nuts, and lemon & salt

Snack Ideas:
Sara Snow's Energy Bars (2.5 c. quick oats, 1/3 c. ground flax or chia seeds, 1/4 c. dark cocoa powder, 1/2 t. spirulina, 1/2 c. honey, up to 1/2-1 cup boiled water, 1/2 c. almond/peanut/sunflower seed butter)
Sara Snow's Chocolate Smoothie (2 c. Coconut or Almond Milk, 1 banana, 3+ T. chocolate [syrup, cacoa nibs, carob], 3 c. ice)
Veggies & Hummus
Almonds & Berries
Celery & Peanut Butter
Yogurt & Berries
