Soft Oatmeal Cookies


I don't know what it is about Sundays -- but it seems that I can't go without a Sunday night treat. Tonight we made these cookies. We've made them a few times before and they're always a hit. After hunting for the recipe on Allrecipes, I realized it was time to induct them into our family recipe archive.

Recipe from Allrecipes.com, adapted slightly

1 c. butter, softened
1 c. white sugar (I'll try reducing this to 1/2 cup next time)
1 c. packed brown sugar
2 eggs
1 tsp. vanilla extract
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. ground cinnamon
3 c. oats

Preheat oven to 375 degrees. In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats.

Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Bake for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
