Puffed Chili Eggs

We had these eggs at a large family gathering this Summer. A great and easy way to make breakfast for big groups. 

10 eggs                     
1/2 cup flour               
1 tsp baking powder        
1/2 tsp salt                
1 lb low fat cottage cheese
1 lb Monterey Jack cheese, shredded
 1/2 cup butter, melted
1 or 2 (4oz) cans diced green chiles
Salsa

Beat eggs till light and lemon colored. Add flour, baking powder, salt, cottage cheese and butter.  Mix well and stir in green chilies. Pour into buttered 9x13 pan or spray with cooking spray. Bake, uncovered, at 350 degrees for 35 minutes until top is brown and center is firm. Serve with salsa. Serves 8-10.
