I am a huge believer in menu planning. I hate that feeling that comes around 4 PM and I have no idea what to make for dinner. So I'm not sure why menu planning has been such a challenge for me the last few months.
We've made a few changes around here: we added a new family member, started shopping for two weeks at a time at Costco, moved across town, and DJ started a new job that sometimes brings him home after dinner time. We've had to be flexible. So here's a menu plan that is likely to get scrambled and changed throughout the week. But for me, a rough plan is better than no plan.
Sunday: Taco Salad with Slow Cooker Sweet & Spicy Chicken
Tuesday: Honey Lime Enchiladas + Smoothies
Wednesday: BLT's + Sweet Potato Fries + Fruit
Thursday: Buddy's 3rd Birthday -- OUT or his favorite: Chicken Nuggets + Corn + a "Sprintles" cake
Friday: Homemade Pizza Night
Saturday: Chopped Autumn Salad (chopped romaine, bacon, pears, feta, craisins w/ vinaigrette)
