We've been sick around here. Last week involved a few dinners from the drive-thru. DJ had Strep Throat and Bronchitis early last week then was forced to quickly recover when I found out I had Strep Throat and SHINGLES!! Who gets shingles?!?
Anyway, my pain has been pretty unpredictable. Sometimes it's bearable (like yesterday afternoon) and I'm up to prepping a decent meal. Other times all I can do is lie on the couch and cooking is my last priority. So this week's plan will have to be extra flexible.
Saturday: Take Out
Sunday: Slow Cooker Chicken & Mushrooms + Brown Rice + Green Salad + Fruit Salad
Monday: Stuffed Bell Peppers* (or Soup + Grilled Cheese)
Tuesday: Hawaiian Haystacks
Wednesday: Stuffed Pizza Rolls* + Green Salad
Thursday: Chenae's Chicken Tortilla Soup
Friday: French Toast + Fruit
Baked Kale Chips -- I made these yesterday because we got Kale in our Bountiful Basket and I've been curious to try them. They were interesting -- and I'd say the crispier you can make them, the better and more chip-like. DJ really liked them.
