Snickerdoodles

Last week when we had company for dinner, I realized I needed a quick dessert so I tried this recipe. These cookies were pretty much perfect. I was surprised at how thick they were -- but still so soft. I'll be making these again, especially since the ingredients are all staples.

1 1/2 cups sugar
1/2 cup butter, softened
1/2 cup shortening (*I cut this out and used 1 cup butter total)
2 eggs
2 3/4 cups flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
1/4 cup sugar
2 tsp ground cinnamon

Mix 1 1/2 cups sugar, butter, shortening, and eggs in large bowl. Stir in flour, cream of tartar, baking soda and salt. Shape dough into 1 1/4 inch balls. Mix 1/4 cup sugar and cinnamon. Roll balls in cinnamon-sugar mixture. Place 2 inches apart on ungreased cookie sheet. Bake in 400 degree oven for 8-10 minutes or until set. (Don't overbake!!) Remove from cookie sheet to wire rack to cool.

I made these tonight with my son. They're awesome! They're even more awesome when they're cooled completely. Thanks again for a great find!
