Mexican Rice

Recipe from Michelle Christensen

1 Tbsp oil
1 cup uncooked rice
1 cup chopped onions
1/2 cup bell pepper
1 clove garlic or 1 tsp. minced garlic
1/2 tsp. cumin

Brown rice in oil on medium heat. Add all other ingredients (above). Cook on medium heat until veggies are tender.


2 cups water
1 tsp. salt
1/8 tsp. pepper
1 cup fresh chopped tomatoes

Bring to a boil and simmer covered for 20 minutes.
