Chicken Parmesan

3-4 boneless, skinless Chicken Breasts
2 Eggs, slightly beaten
1 tsp Salt
1/8 tsp Pepper
¾ c. dry Bread Crumbs
½ c. Vegetable Oil
2-8 z. can Tomato Sauce
¼ tsp. Basil crumbs
1/8 tsp. Garlic powder
1 T. Butter
½ c. Parmesan Cheese
8 oz. Mozzarella, cut into triangle slices

1.Place chicken on cutting board and pound lightly w// side of heavy knife.
2.Combine eggs, salt, and pepper. Dip chicken in egg mixture, then into crumbs.
3.Heat oil until very hot in large skillet. Quickly brown chicken on both sides. Move to shallow baking dish. Pour off excess fat.
4.Stir tomato sauce, basil, and garlic powder in sauce pan. Bring to boil. Simmer for 10 minutes or until thickened. Stir in butter. Pour over chicken and sprinkle with Parmesan. Cover with tin foil.
5.Bake at 350 for 30 minutes. Uncover and put cheese onto chicken. Bake for 10 min until cheese melts.
