This Week's Menu: 7/21 - 7/26

Thursday: Chelise's {Detox} Vegetable Soup (Sauté Onion, Celery, Carrots, Bell Peppers. Add about 4 cups chicken broth. Boil 1/2 head cabbage, broccoli, cauliflower, zucchini, spinach. Add white beans. Add V8 juice (2-3 cans?).
Season with salt, pepper and maybe some hot sauce?)
Friday: Chili (in Slow Cooker) 
Saturday: Creamy Tomato Pasta + Steamed Vegetables
Sunday: {Pioneer Day} Slow Cooker BBQ Chicken + Mashed Potatoes + Corn + Biscuits
Monday: Tamales (costco) w/ lentils + Sautéed Cabbage
Tuesday: Black Bean Soup + Quesadillas

SO fun to have your blog to look at for ideas. Tamales at costco?? Frozen section???

@Heather, the Tamales are in the refrigerated section of Costco, by the salsas and fresh guacamole, etc. Also, in the soup/beans aisle they have some packaged lentils that are really yummy on top of the tamales. They are called "Madras Lentils", but you heat them in the microwave for 1 minute and they are such a great "sauce" for the tamales. It's an awesome easy-to-whip up meal for those nights when you need something quick with minimal effort. :)
