This Week's Menu: 6/6 - 6/12

Playing around with more of an anti-inflammatory diet -- in an attempt to combat an esophagus  condition my husband has.

Friday: OUT (to Cafe Fresh)
Saturday: Summer Cobb Salad 
Sunday: Chipotle Kale with Roasted Vegetables + Fruit
Monday: Stir Fry (broccoli, carrots, bell pepper, ginger, cilantro, onions. etc) + Brown Rice + Pineapple Juice
Tuesday: Avocado & Grilled Corn Salad + Fruit
Wednesday: Fried Eggs + Sweet Potato Hash + Avocado Slices
Thursday: Mediterranean Lentil Salad  (or this one?) (make-ahead) + Fruit

Other:
Baked Kale Chips
Roasted Chickpeas
Apricot Lara *Balls
Banana Ice Cream
