Basic Quinoa

Recipe from Rachel Swan

2 cups of water (can also use vegetable or chicken stock)
1 cup of quinoa

Soak quinoa for at least 20 minutes (or overnight if sprouting) and rinse well. Place water and quinoa in medium saucepan and bring to a boil. Reduce to a simmer, cover, and cook until all the liquid is obsorbed, about 15 minutes.
