Here's another version of Cafe Rio's chicken from my sister-in-law, Paige.
I think I might like this version best.
2 lbs chicken breast
1/2 of a small bottle of Zesty Italian Dressing
1/2 Tbsp of garlic, minced
1 pkg dry Ranch Dressing mix (combined with 1/2 cup of water)
1/2 Tbsp chili powder
1/2 Tbsp ground cumin
Place all ingredients in a crock pot. Cook on High for 5-6 hours or on Low for 8 hours. Before serving, shred with a fork and return chicken to pot to soak up juices. Serve in salads, burritos, tacos, etc.
You can also double or triple this recipe to make extra for freezing. Simply thaw and reheat for a quick meal.
