Tuesday: Mini Pizzas + Tomato & Avocado Salad
Wednesday: Bajio Chicken Burritos
Thursday: Cafe Rio Salads (use leftover chicken)

*My dad's great, great grandfather is from Denmark. Somehow this must have influenced our family's eating habits. Because growing up, if you asked mom, "what's for dinner?" and she said, "Danish" it meant that our table would be filled with various breads, peanut butter & honey spreads, jellies, cheeses, fruit salad, yogurt, a pitcher of milk, etc. Every now and then, something simple and fresh sounds like just the thing amidst all the hot cooking, chopping, and mixing during the week. I'm really looking forward to Danish Night this week. Who knows if that's what they'd really eat for a meal in Denmark. But I like it.
